The Kernando Flavor Control Division began, like most regulatory bodies, with an incident. A bag of store-bought ranch popcorn was opened one evening. The bag said "ranch." The popcorn said almost nothing. It tasted like the popcorn had once shared an elevator with some ranch and didn't want to talk about it.

An inquiry was opened. The inquiry found that the entire category operates this way — flavor referenced, never applied. A dusting. A hint. Notes. The inquiry's author acquired a spice grinder and began producing counter-evidence: popcorn seasoned past every published guideline, batch after batch, until test subjects stopped saying "that's good" and started saying "what is this and why is the bowl empty."

The Division was established to bring this product into compliance with reasonable seasoning limits. It has failed at every review. The product now ships with the violation printed on the front of the bag, which the Division considers full disclosure and the kitchen considers a brag. Both are correct.

Kernando takes flavor seriously. Everything else is paperwork.

Standing orders

  • The seasoning is the product. The corn matters — a butterfly kernel is popped specifically for its capacity to hold dust. But the budget went to the blends, and the blends went onto the popcorn. All of them. Repeatedly.
  • Every flavor must be nameable blind. One piece, eyes closed, instant identification. Hesitation constitutes failure. Failure is corrected with more seasoning.
  • No health cosplay. This is popcorn carrying a serious quantity of seasoning. Popcorn is a whole grain, which is pleasant, and the nutrition panel will do the rest of the talking. The Division does not practice medicine.
  • Honesty is the one regulation we keep. Real ingredient declarations, real weights, real reviews when they exist, zero fabricated testimony. Everything else on the bag is a joke. Nothing on the label is.

Pending matters

Four flavors are on file. The backlog of blends awaiting classification is long, and the test kitchen keeps submitting new evidence. Pre-order customers and list subscribers vote on future flavors before they launch — register here. Flavor policy has been swayed by fewer people than you'd think.
